Chimichurri

Chimichurri is one of those sauces that makes just about anything better. It’s fresh, garlicky, tangy, and packed with herbs, with just enough red pepper flakes for a little kick. Spoon it over grilled steak or chicken, drizzle it over roasted vegetables, or pile it onto a baked potato with butter and creamy ricotta, one of my favorite ways to eat it. It’s simple to make, but adds so much flavor to whatever you’re serving.

Method

    Add the white onion, garlic, cilantro, oregano, thyme, red chili flakes, salt, and pepper to a bowl.

    Pour in the red wine vinegar and stir well. Let sit for about 5–10 minutes to mellow the onion and garlic and allow the herbs to absorb the vinegar.

    Stir in the olive oil until everything is well combined.

    Taste and adjust with additional salt, red pepper flakes, or vinegar as desired.

    For the best flavor, let the chimichurri sit for 20–30 minutes before serving.
