Chimichurri

A fresh and flavorful chimichurri made with herbs, garlic, red wine vinegar, and olive oil—the perfect way to brighten up grilled meats, vegetables, potatoes and more

Ingredients

  • 1/2 cup white onion (finely diced)
  • 4 cloves garlic (minced)
  • 1/2 cup fresh cilantro (finely chopped)
  • 2 tablespoons fresh oregano (finely chopped (or 2 teaspoons dried oregano))
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1/2–1 teaspoon red chili flakes
  • 1/2 teaspoon salt (plus more to taste)
  • 1/4 teaspoon black pepper
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil

Method

    Add the white onion, garlic, cilantro, oregano, thyme, red chili flakes, salt, and pepper to a bowl.

    Pour in the red wine vinegar and stir well. Let sit for about 5–10 minutes to mellow the onion and garlic and allow the herbs to absorb the vinegar.

    Stir in the olive oil until everything is well combined.

    Taste and adjust with additional salt, red pepper flakes, or vinegar as desired.

    For the best flavor, let the chimichurri sit for 20–30 minutes before serving.
