Alfredo Sauce (Olive Garden Copycat)

this is easy and delicious, and it only takes 15 minutes.

Ingredients

  • 1/2 cup butter ((1 stick))
  • 2 cup heavy cream
  • 3–4 cloves garlic (minced)
  • 3/4–1 cup parmesan cheese (freshly grated (no pre-shredded))
  • 1/4 cup romano cheese (this is the Olive Garden secret)
  • salt (to taste)
  • fresh cracked black pepper
  • 1 pinch nutmeg
  • 1/2 cup pasta water

Method

  1. 1

    Melt butter over medium-low

  2. 2

    Add garlic, cook 30–45 seconds

  3. 3

Pour in heavy cream. Bring to a gentle simmer. Simmer 5–7 minutes, stirring often. You want it slightly thick but still pourable.

  4. 4

Lower heat. Add Parmesan & Romano gradually. Stir constantly until smooth. Don’t let it boil once the cheese is in, keep heat LOW for a smooth sauce

  5. 5

Add salt, black pepper, & tiny pinch nutmeg

  6. 6

Add cooked fettuccine straight into the sauce. Add 1/2 cup pasta water. Toss over low heat until glossy and clingy. Add more pasta water if needed. Enjoy, friends
